Glorious Chocolate Chip Cookie Bars

Why divide out dough balls? These are based on some previous chewy chocolate chip cookies, but with even more richness to accommodate the bar form (and/or altitude).

Even the crunchy cookie guy liked them!
  • 1 cup (2 sticks) melted real butter
  • 2 Tbsp neutral oil, such as canola or vegetable
  • 1 1/4 cups brown sugar
  • 1/4 cup white sugar
  • 1 1/2 tsp vanilla
  • 2 large eggs, beaten
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 2 1/4 cups flour
  • 2 1/2 cups dark or semisweet chocolate chips
  1. Preheat oven to 375 degrees Fahrenheit, and coat a 9 x 13 inch cake pan with cooking spray.
  2. Whisk together the butter, oil, and sugars.
  3. Mix in the eggs and vanilla until smooth, then whisk in the baking soda and salt.
  4. Slowly incorporate the flour until you have something gloppy (not quite as thick as cookie dough!), then mix in the chocolate chips.
  5. Spread evenly in pan, and bake for ~10 minutes, or until still a bit moist. Don’t overdo it!
  6. Cool before cutting into bars.
