Lovers of crisp, rejoice! These cookies are classic, extra chocolaty, and just the way my (insane) partner likes them: crunchy!
The rest of us can make these.
1 cup (2 sticks) butter, at room temperature (melting is for chewy cookies!)
3/4 cup white sugar
3/4 cup brown sugar
1 1/2 tsp vanilla
1 large egg, beaten
1 tsp baking soda
1/2 – 1 tsp salt, depending on whether butter is salted and preference. I recommend more!
2 1/4 cups flour
2 1/2 cups mini chocolate chips
Preheat oven to 375 degrees, and prepare a few ungreased cookie sheets.
Whisk together the butter, sugars, egg, and vanilla until smooth. Stir in the baking soda and salt.
Slowly stir in the flour, then finish mixing the dough with your hands. Add the chocolate chips and mix until well-incorporated.
Shape into ping pong sized balls (or a little smaller), and arrange with ample space on your cookie sheets.
Bake for at least 15 minutes, or until deeply golden to ensure a good crunch once cooled!
