The Sweet & Spicy Pecans at Trader Joe’s are deadly delicious.
But you can probably use other nuts in these, like candied pecans, toasted walnuts, or even honey-roasted peanuts! The saltier the better. 😉
1 stick real butter, melted (yes, melted! Easier and helps with chewiness)
1 cup packed brown sugar
1 large egg, beaten
1 tsp vanilla
1 1/4 cups flour
1/4 tsp salt (or about 1/2 tsp if you use different nuts that aren’t salty)
1/2 tsp baking powder
1/4 tsp baking soda
1 (5 oz) bag Trader Joe’s Sweet & Spicy pecans, finely ground
Turbinado or additional brown sugar, for rolling
Preheat oven to 350 degrees, and grease a large cookie sheet (or a few smaller ones).
Whisk together the melted butter, sugar, egg, and vanilla. Combine the flour, baking powder, baking soda, and salt, then slowly incorporate into the wet ingredients.
Mix the ground pecans into the dough until well distributed. Divide into ~12 balls, and roll in turbinado sugar before arranging on cookie sheets with sufficient space in between. These will spread, so no need to press!
Bake for 9 to 11 minutes, or until nicely shaped and just starting to form cracks. Don’t overdo it!
