I wanted to make a vegan recipe and was so proud of my egg substitution! Then I realized I used honey. Whoops.
Maybe you can try this with maple syrup, though! Or 1-2 eggs instead of the flax meal for non-vegan. On a side note, chocolate + olive oil = unusually deep and delicious! Trust me.
1 1/2 cups blanched or superfine almond flour
1/2 cup unsweetened cocoa powder
1/2 tsp salt
1 tsp baking powder
1 orange (see below)
1.5 Tbsp flax seed meal, plus 1/4 cup juice from your orange
More orange juice or almond milk, to thin the batter
1/4 cup olive oil
1/3 cup honey (or try maple syrup)
1/4 tsp almond extract
1/4 cup mini chocolate chips, vegan or regular
Preheat oven to 375 degrees, and line ~8 standard muffin cups.
Scrape a little zest from your orange (1-2 tsp should do) into a large bowl, then set aside. Squeeze the 1/4 cup juice into a smaller bowl, then stir in the flax meal and set aside.
Add the almond flour, cocoa powder, salt, and baking powder to the bowl with the orange zest, and whisk until nicely blended.
Stir in the olive oil, honey, and almond extract, then add enough juice or almond milk to reach a consistency slightly thicker than cake batter. Stir in the chocolate chips.
Divide among muffin cups, and bake for ~25 minutes, or until puffed and juuust done in the middle.
