You also make about 24 standard muffins (reduce baking time to ~20 minutes, of course!)
3 cups flour
4 tsp baking powder
1 tsp salt
1 1/2 cups white sugar
1/2 cup brown sugar
20 Tbsp (2 1/2 sticks) real butter, melted
4 large eggs, beaten
1 cup milk
2 tsp vanilla
2 cups fresh or frozen blueberries. I like the teeny wild ones!
1/2 tsp almond extract
1/2 tsp cinnamon
Preheat oven to 400 degrees, and line 8 jumbo muffin cups.
Combine the flour, baking powder, salt, sugars, and cinnamon (if applicable). In a larger bowl, mix the melted butter, eggs, milk, vanilla, and almond extract (if applicable).
Gently whisk the wet and dry ingredients into a smooth batter, then stir in the blueberries.
Divide among muffin cups, and bake for 45+ minutes, or until nicely browned and a toothpick comes out just clean.
