2 pounds ground sirloin
2 Tbsp minced garlic
1 large egg, beaten
3/4 cup whole milk ricotta cheese. Try lower fat (or cottage cheese) at your own risk!
3/4 cup panko breadcrumbs
1 tsp salt
1 tsp onion powder
1 Tbsp brown sugar
1 tsp dried basil
1 tsp dried oregano
1/2 tsp cayenne pepper
A few sprikles of chili powder (optional)
2 Tbsp marinara sauce to mix in, plus more for serving
Preheat oven to 400 degrees, and prepare a large broiler or sheet pan.
Combine all ingredients with your hands, kneading together until well-incorporated.
Shape into fairly large balls (maybe 2 inches in diameter), and arrange with some space on the pan.
Bake for ~20 minutes, or until just done.
Bathe in marinara sauce (I like to mix extra cayenne and honey into a bought jar), and serve with noodles or bread. Or just have a bowl of sauce with meatballs swimming around, like a soup!
