Grain Free Cookie Dough Muffins: The Next Generation

The originals used cashew butter, but how about an almond butter twist?

Make them so!

3/4 cup almond meal
1/2 cup almond butter
1/2 tsp baking powder
1/4 tsp salt
1 large egg, beaten
1/3 cup maple syrup
1/2 tsp vanilla
1/8 tsp almond extract
1/4 cup mini chocolate chips

Preheat oven to 350 degrees, and line 5-6 standard muffin cups.

Combine all ingredients but the chocolate chips, and whisk until just blended. The batter should be thick, but not downright pasty. If that’s the case, thin it out with a little milk.

Stir in the chocolate chips.

Divide among muffin cups, and bake for ~25 minutes, or until just done.
