Grain Free Black Forest Muffins

I just love cherry! Rich chocolate, hazelnut, and almond flavors complete the picture.

1/2 cup almond meal (NOTE: the original attempt used 2/3 cup, plus 1/4 cup almond milk. I think just using less of this is better.)
2/3 cup chocolate hazelnut butter (I used Justin’s. Nutella might be a sugary overload, but you can try, perhaps with less maple!)
1/4 tsp salt
3/4 tsp baking powder
1/2 cup cherry preserves or fruit spread
1/4 cup maple syrup
1 large egg, beaten
1/2 tsp almond extract
1/4 cup mini chocolate chips

Preheat oven to 375 degrees, and line ~8 standard muffin cups.

Combine all ingredients except chocolate chips, and whisk until just smooth. If the batter is too pasty-thick, add a little milk (any kind). Gently stir in the chocolate chips.

Divide among muffin cups, and bake for ~25 minutes, or until juuuust done in the middle. These should be rich and moist!
