1 – 1 1/4 cups blanched almond flour (you want a thick batter, but not too sticky)
1/4 cup unsweetened cocoa powder
1/4 tsp salt
1 tsp baking powder
3 Tbsp butter, melted
1 large egg, beaten
1/2 cup honey
1/4 cup orange juice
1 tsp vanilla
1/4 cup mini chocolate chips
Preheat oven to 350 degrees, and line ~7 standard muffin cups.
Whisk together all ingredients except chocolate chips until just blended. You can separate wet and dry stuff, but I usually just toss it all into one bowl.
Gently stir in the chocolate chips, and divide among muffin cups.
Bake for ~20-25 minutes, or until a toothpick gives moist crumbs. Don’t overdo it!
