Grain Free Peanut Butter Apple Cinnamon Muffins

Have you ever had apple butter?

It’s certainly not jelly, and it’s definitely  not butter, although it’s amazing with butter on a fluffy biscuit. Use any leftovers for that!


2/3 cup blanched almond flour
1/2 cup apple butter (mine was unsweetened, but sweet/spiced is probably great! Applesauce may or may not sub well.)
1/4 cup honey
1/2 cup creamy peanut butter (I used the more solid, non-natural kind)
1 large egg, beaten
1/2 tsp vanilla
1/4 tsp salt
1/2 tsp baking powder
2 tsp cinnamon

Preheat oven to 375 degrees, and line 6 standard muffin cups.

Mix all ingredients until smooth, and divide among cups. Boom!

Bake for ~25 minutes, or until a toothpick gives just a couple of crumbs.
