You might try maple syrup and coconut butter in place of the molasses and peanut butter, respectively. Perhaps add cinnamon!
1/2 cup blanched almond flour
1/2 cup mashed, ripe banana
1/2 cup peanut butter (mine was generic, not natural)
1/4 cup molasses
1/4 tsp salt
1/2 tsp baking powder
1 large egg, beaten
1/2 tsp vanilla
Preheat oven to 350 degrees, and line 6 standard muffin cups.
Combine all ingredients in a bowl, and beat until smooth. That’s it!
Divide among muffin cups, and bake for 20-25 minutes, or until a toothpick comes out clean.
