Grain Free Peanut Butter Banana Molasses Muffins

One to eat now, and 5 more for the work week. 🙂

You might try maple syrup and coconut butter in place of the molasses and peanut butter, respectively. Perhaps add cinnamon!

1/2 cup blanched almond flour
1/2 cup mashed, ripe banana
1/2 cup peanut butter (mine was generic, not natural)
1/4 cup molasses
1/4 tsp salt
1/2 tsp baking powder
1 large egg, beaten
1/2 tsp vanilla

Preheat oven to 350 degrees, and line 6 standard muffin cups.

Combine all ingredients in a bowl, and beat until smooth. That’s it!

Divide among muffin cups, and bake for 20-25 minutes, or until a toothpick comes out clean.

    1. They seem to last a good week in my fridge! 🙂

      I often make these or similar nut-based muffins on the weekend and take them to work all week without trouble. I wouldn’t leave them out on the counter for more than 2 days or so, though – maybe put one out the night before if you’ll want it room temperature, or even warm it in the microwave.
