Mmmmmmm, cashew butter…you mild, rich, delicious little devil 🙂 Generous extracts make these guys extra cookie-ish and sweet.
1 cup blanched almond flour
1/4 tsp salt
1/2 tsp baking powder
1/4 tsp cinnamon
1/2 cup cashew butter (mine was salted)
1/4 cup maple syrup
1 large egg, beaten
3/4 tsp vanilla
1/4 tsp almond extract
1/4 cup almond milk (or any milk)
1/4 cup mini chocolate chips
Preheat oven to 350 degrees, and line 6-8 standard muffin cups.
Combine the almond flour, salt, cinnamon and baking powder. In a larger bowl, beat together the cashew butter, syrup, egg, vanilla, almond extract, and milk until smooth.
Mix the wet and dry until well-blended, then stir in the chocolate chips.
Divide among muffin cups, and bake for 20-25 minutes, or until just done via toothpick.
