If you haven’t tried sunflower seed butter, you MUST! It’s a lot like peanut butter (which you can also use for this, probably).
1 cup blanched almond flour
1/4 tsp salt
1/2 tsp baking powder
1/2 cup sunflower seed butter (a.k.a. MUFFINDEV’S FAVORITE MANNA FROM HEAVEN 😀 !!!)
1/4 cup maple syrup
1 large egg, beaten
1/2 tsp vanilla
1/4 cup almond milk (or any milk)
1/4 cup semisweet chocolate chips
Preheat oven to 350 degrees, and line 6-8 standard muffin cups.
Combine the almond flour, salt, and baking powder. In a larger bowl, beat together the sunbutter, syrup, egg, vanilla, and milk until smooth.
Mix the wet and dry until well-blended, then stir in the chocolate chips.
Divide among muffin cups, and bake for 20-25 minutes, or until just done and beginning to brown.
