Salty Cinnamon Coconut Butter Muffins

A whole tablespoon of cinnamon for 6 personal muffins? Prepare yourself. đŸ™‚


1 cup blanched almond flour
1/2 cup coconut butter (not the same as coconut oil!)
1/4 cup almond milk (or any milk)
1/4 cup maple syrup
1 large egg, beaten
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp vanilla
1 Tbsp cinnamon (yeah!)

**This time, make sure your ingredients are warm or at room temperature first! Coconut butter can harden otherwise and won’t mix in well.

Preheat oven to 350 degrees, and line 6 standard muffin cups (recipe should double easily, but otherwise this is great for you or your favorite health nut’s work week).

Whisk all ingredients but the coconut butter until smooth. Microwave the coconut butter for a few seconds to liquefy (you can do this to the open jar directly if it’s glass), then mix it into everything else.

Divide batter among cups, and bake for 20-25 minutes, or until just done.
