Makes just a few. Because simplicity 🙂
1 cup blanched almond flour (regular almond meal might work)
1/2 cup heavy cream
2 Tbsp honey
1 large egg, beaten
1/4 tsp salt
1/2 tsp baking powder
Preheat oven to 350 degrees, and line ~5 standard muffin cups.
Whisk together all ingredients until well-blended, then divide among cups.
Bake for 20-25 minutes, or until just done (a few moist crumbs on the toothpick, perhaps). Try using coconut cream, another nut meal, or maple syrup as substitutions, and let me know how it goes!
