Smoked Maple Almond Muffins

You can use regular maple syrup or even honey**, but the smoked stuff makes them super deep and savory!


2 1/2 cups blanched almond flour. Regular almond meal might work.
1/2 tsp salt
1 1/2 tsp baking powder
1/2 cup smoked maple syrup. I found it at a local grocery store; there is also an Amazon selection if you’re feeling fancy.
5 Tbsp melted butter
3 large eggs, beaten

Preheat oven to 350 degrees, and line ~8 standard muffin cups.

Combine the almond flour, salt, and baking powder. In a larger bowl, whisk together the syrup, melted butter, and eggs.

Blend the wet and dry ingredients well, then divide among muffin cups. Bake for 20-25 minutes, or until just done.

**Speaking of syrups and honeys, try some other kinds (wild blueberry honey from that tourist shop? Peach honey? A darker, more robust maple? So many possibilities!). Let me know how it goes!
