Chocolate and coconut are two of my favorite things ever!(!!!) OM NOM NOM.
1 1/4 cups blanched almond flour (plain almond meal might work)
1/2 cup unsweetened, shredded coconut (teeny shreds – NOT flakes)
1 cup cocoa powder
1/2 tsp salt
1 tsp baking powder
3 large eggs, beaten
1 tsp vanilla
2/3 cup coconut cream (the unsweetened stuff)
3/4 cup maple syrup
1/2 cup mini chocolate chips
Preheat oven to 350 degrees, and line ~12 standard muffin cups.
Whisk together the almond flour, coconut, cocoa powder, salt, and baking powder. In a larger bowl, combine the eggs, vanilla, coconut cream, and maple syrup.
Mix the wet and dry ingredients well, then stir in the chocolate chips. Divide among muffin cups, and bake for ~2o minutes, or until just done.
