I love peanut butter. We all love peanut butter! PEANUT BUTTER!!!
1 cup flour
1 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
2/3 cup creamy peanut butter
8 Tbsp (1 stick) vegan margarine
1 flax egg (mix 1 Tbsp. flaxseed meal with 2 1/2 Tbsp water; let sit 5 mins)
1 tsp vanilla
2/3 cup (real!) maple syrup
Preheat oven to 350 degrees, and line at least 24 mini muffin cups.
Whisk together the flour, baking powder, salt, and cinnamon. Measure the peanut butter and margarine into a larger, microwave-safe bowl. To keep the peanut butter from sticking, you can add a splash of water to the bottom of your measuring cup.
Warm the peanut butter and margarine just a bit in the microwave, then whisk until smooth. Add the syrup, vanilla, and flax egg and mix well.
Pour the flour mixture into the wet ingredients, then mix until well-incorporated. Divide among muffin cups, and bake for ~15 minutes, or until crumbs are juuust moist.
For a lovely vegan topping, try mixing peanut butter with maple syrup until gooey and spreadable. OM NOM NOM.
