Almond extract: the liquid from heaven :-).
2 cups flour
2 tsp baking powder
1/2 tsp salt
1 cup sugar
1/2 cup (1 stick) real butter, melted
2 large eggs, beaten
2 tsp vanilla
1 tsp almond extract
2/3 cup milk (almond milk works, too!)
1 1/2 cups super dark or bittersweet chocolate chips
1 cup dried tart cherries
Preheat oven to 400 degrees, and line ~18 standard muffin cups.
Mix together the flour, baking powder, salt, and sugar. In a larger bowl, combine the melted butter, eggs, vanilla, almond extract, and milk.
Combine the wet and dry ingredients, then gently stir in the chocolate chips and cherries.
Divide among muffin cups, and bake 15-20 minutes, or until a toothpick is (mostly) clean.
