Turbinado Cookies

I like the texture provided by coarse sugar here! Recipe name has been corrected for accuracy.


1/2 cup (1 stick) butter, softened
2/3 cup white sugar
2/3 cup coarse tubinado sugar
1 egg
1 tsp vanilla
2 Tbsp Malibu rum, optional
1 1/4 cups flour
1 tsp baking powder
1/2 tsp coarse salt
1/2 Tbsp (1.5 tsp) cinnamon

For coating:
3 Tbsp turbinado sugar
1 Tbsp cinnamon
1/2 tsp coarse salt

Preheat oven to 350 degrees, and line a baking sheet with foil if desired.

Cream together the butter and sugars, then beat in the egg, vanilla, and rum.

In a separate bowl, combine the flour, baking powder, salt, and cinnamon. Slowly pour this into the liquid mixture, and blend into a scoopable dough.

Whisk together the coating ingredients until well incorporated. Take dough by the tablespoon (or so), and roll balls in the coating mixture.

Arrange with sufficient space on the baking sheet, and bake for ~15 minutes, or until very, very lightly browned.
