A basic recipe that screams to be attempted with a splash of Malibu in the dough, perhaps some actual coconut flakes, a good spoon of cinnamon, a glaze of chocolate ganache,…or just alone.
1/2 cup (1 stick) real butter, melted
1 cup coconut cream (the unsweetened stuff)
1 large egg, beaten
1 tsp vanilla
1/2 tsp almond extract…or a whole teaspoon if you love it
1/2 cup white sugar
1/2 cup powdered sugar
1/2 tsp coarse salt
1/2 tsp baking soda
2 1/4 cups flour
Preheat oven to 375 degrees.
In a large bowl, whisk together the melted butter, coconut cream, egg, vanilla, and almond extract. Mix in the sugar and powdered sugar until well blended.
In a separate bowl, combine the flour, baking soda, and salt. Add this gently to the wet mixture, and mix until a very soft, velvety dough forms.
Drop by the teaspoonful (or larger) onto an ungreased baking sheet. Roll in powdered sugar beforehand if desired, or just sprinkle additional white sugar on top.
Bake for 8-10 minutes, or until *very* lightly browned.
