Ohhh…if you have some crazy tropical alcohol on hand, you could totally add a tablespoon of that, too. Chopped nuts are also fair game.
1/2 cup unsweetened coconut cream
1 cup white sugar
1 tsp vanilla
2/3 cup crushed pineapple, drained
3/4 cup shredded coconut (mine was sweetened; in hindsight might want unsweetened or less sugar)
1 1/2 cups rolled oats
1 cup flour
1/2 tsp salt
1/2 tsp baking soda
Preheat oven to 350 degrees, and line a baking sheet with foil and/or cooking spray.
Just throw everything into a huge bowl and mix well! Then, drop balls of dough onto your baking sheet, ensuring sufficient space for spreading. Mine were somewhere between a gum ball and a golf ball…ha.
Bake for 12-15 minutes, or until slightly golden.
