Also, a necessary vanilla cinnamon overload!
1/2 cup (1 stick) unsalted butter, softened
1/2 cup white sugar
1/2 cup honey
2 Tbsp turbinado sugar (or other coarse or brown sugar)
1 Tbsp vanilla (yes!)
1 cup flour
1 1/2 to 1 3/4 cup rolled oats. More will be a little drier
1/2 tsp coarse salt
1 Tbsp cinnamon
1/2 tsp baking soda
1 cup coarsely chopped walnuts
Preheat oven to 350 degrees, and prepare a baking sheet with cooking spray and/or foil.
Whisk together the softened butter, white sugar, and honey. Add the beaten egg, vanilla, and turbinado sugar, blending until smooth.
In a separate bowl, whisk together the flour, salt, baking soda, cinnamon, and oats. Add this to the wet mixture, then dump in the walnuts.
Stir or hand-smush everything together until well-incorporated. Drop by tablespoonfuls onto the prepared cookie sheet and bake for 12-15 minutes, or until golden brown.
Carefully remove from baking sheet with ~5 minutes, and cool completely before storing.
