Banana Nutella swirl muffins

Ready to use up those bananas? Peanut butter instead of Nutella might work well, too – with a little extra sugar or honey. Makes ~20 muffins.



6 overripe bananas, mashed (or food-processed for ultra smoothness)
1 heaping cup sugar
2 large eggs
1/3 cup melted butter
1/3 cup vegetable or canola oil
2 tsp vanilla (or vanilla bean paste OMGGGG)
3 cups flour
2 tsp baking soda
1 tbsp baking powder
1 tsp salt
1 cup nutella
1 cup chocolate chips or chunks

Whisk together the flour, baking soda, baking powder, and salt. In a separate bowl, mix the melted butter, oil, beaten eggs, sugar, and vanilla.

Blend all that together, adding a little milk or cream if needed to get a thickish, pancake-like batter.

Divide batter in half. Warm the Nutella a bit, and mix it well into one half.

Fill muffin cups about halfway with Nutella batter, then sprinkle on a layer of chocolate chips. Spoon the plain banana batter over that, then gently swirl a knife around in each cup.

Bake at 375 degrees for ~20 minutes, or until nicely browned and a toothpick comes out clean.
