Brining and high heat are key here! This would probably work with 4 chicken breast halves instead, or even some turkey cutlets.
4 cups very warm water
1/4 cup kosher salt
A good squeeze of honey
8 boneless, skinless chicken breast tenderloins
4 long bacon strips
1/2 cup honey
1/4 cup soy sauce
Black pepper, smoked paprika, basil, and/or other herbs and spices for sprinkling.
Combine the water, salt, and honey, trying to dissolve things as thoroughly as possible. Pour into a large ziploc with the raw chicken tenders. Place into a bowl for stability, then refrigerate for 30 minutes to 1 hour.
Preheat oven to 450 degrees. Line a baking pan with foil and some cooking spray.
Whisk together the honey and soy sauce. You can warm them a bit in the microwave to help things combine.
Take two chicken strips at a time, and dip into the honey-soy mixture. Carefully wrap a bacon strip around this pair, then place into the baking pan. Repeat for the rest.
Brush finished pairs with additional honey mixture, sprinkle with pepper and herbs, and bake for ~15 minutes, or until juuuust done. It’s nice to brush even more honey-soy on them around the 7 minute mark.
