For tasty normal brownies, just leave out the spices. You could also try adding a different flavor via fruity alcohol, melted jam, wasabi, cinnamon, almond extract, extra vanilla – whatever!
1 stick (8 tbsp) unsalted butter, melted
1 1/4 cups sugar
1 tsp vanilla extract
1/2 tsp coarse salt
1 tsp baking powder
1/2 tbsp chai spice blend
1/4 tsp cayenne pepper, or to taste
1 cup unsweetened dark cocoa powder (Dutch process is lovely!)
1/2 cup semisweet chocolate mini chips
Preheat oven to 350 degrees, and line a small pan (such as 8×8″) with foil. Spray the foil with cooking spray.
Whisk together the melted butter and sugar. Whisk in the eggs and get everything nice and smooth. Mix in the vanilla.
Combine the cocoa, baking powder, spices, and salt in a separate bowl, then mix smoothly into the wet ingredients. Stir in the mini chocolate chips.
Spread into the pan, and bake for 25+ minutes, or until a toothpick shows wet crumbs. These seem to bake slowly.
Be sure to cool completely before cutting!
