Chocolate raspberry lava cakes

If you leave out the jam (and increase sugar to 1/3 cup!), you’ll get equally delicious normal lava cakes.

And there’s so much you can do with this recipe. Try another seedless jam flavor like strawberry, or throw in 1 tbsp of your favorite liquor instead! Fireball, Kahlua, or some sort of vodka might do.

2 oz dark chocolate
2 tbsp butter
1 whole egg + 1 egg yolk
1/4 cup sugar
3 tbsp seedless raspberry jam
3 tbsp flour

Preheat oven to 400 degrees, and grease 2 or 3 custard cups/ramekins/other little batter holders.

Melt together the chocolate, butter, and jam. Whisk the eggs and sugar into that, then mix in the flour. A dash of salt is nice, too.

Divide among ramekins, and bake 10 minutes, or until a toothpick near the edge comes out clean. Keep the middles nice and damp!

Allow to sit for 10 minutes before eating.
