Paleo Bittersweet German Chocolate Squares

By “German chocolate”, I just mean “featuring tasty coconut and pecans!”

Like that cake we all know, but hopefully better. That stuff needs real icing, anyway.

1/2 cup coconut oil
3 Tbsp honey
1/2 cup unsweetened cocoa powder
1/8 tsp salt (or 1/4 tsp for salty heaven…or just a dash if you’re not into that)
1/2 tsp vanilla
1/8 tsp almond extract (optional, but delicious!)
1/8 tsp coconut extract (optional, but delicious!)
1/4 cup chopped, unsalted pecans
1/2 cup shredded coconut, sweetened (yay!) or not (meh)

Melt the coconut oil in a small saucepan over super low heat, then quickly whisk in the honey and cocoa powder.

Remove from heat, and whisk in the salt and extracts. Stir in the coconut and pecans, then pour into a small, foil-lined pan (8×8 or less). If you don’t want to cut your own squares, a silicone ice cube or candy tray works, too!

Refrigerate or freeze briefly until firm, then cut into squares or remove chocolates from tray. Enjoy, and keep them cool!
